Pike perch, also known as Zander, has a firm and flaky texture and is white- colored. It is found in clear, fresh, and deep waters throughout Europe. Pike perch is a moderate sized fish which has pinkish skin with dark striping.

Pike Perch is closely related to Walleye, long a favorite in the Great Lakes region. It is available as individually quick frozen fillets that are graded 20-40g, 40-60g, 2-4 oz, 4-6oz, 6-8oz, 8-10oz, and over 10oz sizes. Pike Perch is often available in sizes that are hard to find for Walleye and at prices that compete favorably with it.
