Emerald Perch is a wild-caught fresh-water perch found in European lakes and streams. It is a white-fleshed, mild-tasting fish with many of the characteristics of lake perch common to North America, but is available at a more attractive price.

Emerald Perch's natural size produces fillets which are approximately an ounce, making it extremely versatile and allowing superior portion control. It lends itself readily to appetizer and tapas presentations, or can be served as a full meal by offering enough pieces for an 8-12 ounce serving.

Emerald Perch is available year-round, and is often used in place of smaller-sized Zander, which has recently become difficult to source.
